In part one of our two-part interview with John Heckathorn, noted food writer and man-about-town, he gives us his view of dining in Honolulu and why it's so hard for new places to open. We talk about Hawaii Regional Cuisine at this point in time and why the changes in our dining scene are coming from the bottom up. He also explains why he loved The Third Floor so much. In part two (which will be in our next podcast), we will chat about what's happening with all the Japanese places opening and what's up with Chinese restaurants.
